My Monday post about what is going on around my home.
Pickles ! ! !
Daughter came over and helped me make some quick Japanese styled pickled vegetables.
I used half a bottle unfiltered (that is why the liquid looks cloudy) apple vinegar, two tablespoons each of sugar and salt add a splash of water and boil till dissolved. Pour over sliced seeded Jalapenos, Carrots and Onion slices, or your choice of vegetables. Let sit and store in the refrigerator for a day or so, they get better the longer they sit, but these veggies never last around me. I chop and add them to everything.

Cabbage, garlic and a few Jalapenos.

I tried my hand at "Cowboy Candy" Jalapeno peppers cooked in a sugar syrup with Celery Seed and Turmeric. I didn't have the right size of container so they look lonely in the big dish. The sweet/spicy syrup smelled so good I poured the leftover syrup over the vegetables in the above photo.
Since I don't know how to can for stable shelve life, I like to make small batches of pickle vegetables to store in the refrigerator. That is why I like the quick Japanese style of pickling that my daughter is so good at. Plus after years and I mean years of eating carrots this gives me a new and exciting way to eat carrots.
If I like the Candied Jalapenos, I will look into getting a few correct size jars instead of using what I have on hand.

Just because it is my blog, here is another moment of Zen sunset. I sat and watched it till the sun completely set, beautiful ! The sunset was a bit softer but the camera really focused on the sun. Camera problem aside, I rather like the circles of colors expanding out.

    mmmmm pickles <3 I think we call them Japanese pickles but probably the better name for them is refrigerator pickles. Yum yum. Maybe you should toss those whole garlic cloves in the brine with the peppers/carrots/onions if they don't get pickled enough with the "cowboy candy". so jealous! If I ever get jalapenos from the CSA you can bet your tooshie they're going to be made into pickles!

  4. Great way of eating veg and they look similar to a jelly MTL has taken to making. He won't tell me what he puts in it but although it looks odd for jelly it tastes good.

  5. Those shots of sunset are nothing to put in the category of "camera problem"! Beautiful!

    The veggies sound wonderful and perhaps I will give them a try. I'd developed a wonderful habit that has somewhat gone by the wayside since I returned to work, but I'm reminded I need to recapture it. Each week I'd roast an oven (or BBQ grill) full of whatever vegetables were in season, using some garlic, rosemary, freshly ground sea salt, whatever came to mind and sounded good. I'd pick at those veggies all week long, bringing everyone in the household running with the wonderful fragrance. Reminder to self: roast vegetables. It can be done while the appliances do all the other necessary weekend chores.

  6. Those pickles are interesting parsnip not least because they are so foreign to our way of doing things. I would love to know what they taste like, so maybe I shall have to try making some.

    After eating way too many carrots, when everyone was eating french fries, burgers, steak, I was eating salads with extra carrots.... so very tired of them. Now I have a new and interesting way to enjoy them.

    They are so easy and fun to make. I have several books on the Japanese way of quick pickling. So easy for me to do. If I lved where you do and wanted to have Veggies and fruit to last a very cold winter I would learn how to can, like you do.
