Kasutera Cake or Castella Cake. Very nice type of a sponge cake.When I live in California and shopped at Mitsuwa market I use to buy them. Gosh I miss that market.
That's the one. I use honey in cakes now along with maple and sorghum but I'm curious about this castella cake.
Oh man, just found a formula for it and there are two ingredients that I won't use. Oh well, back to my own honey cakes. But, if I could, I'd make that one to see how it tastes. Or better yet, if I'm making wishing, I'd sap myself to Japan and taste it fresh, made in a wooden box and all. How flippin' cool. PS: I'm watching a food show about Japan and I can see why you love the food. So clean. Just lovely.

I don't mind the egg but I won't use the wheat flour or the cane sugar that they've used (or at least in the formula that I found). So that's okay, I can still continue to make my own lemon cakes. These cake are a very nice sponge type cake.At Christmas time Mitsuwa would have extra tables filled with wonderful gift packages for Christmas and New Years. Wonderful crackers, cookies cakes and candy. Hot chestnut to buy by the bag.... so good.

Well are so behind.... Have to stop falling !Just decorated the home on Sunday finishing up today. Going to the nursery for two plants (cactus) for gifts for tonight. If we can't read it note in a card, eat it, plant it or burn it (candle ) we do not give it !
